Heat oil in small skillet over medium heat. Cook onion 1 minute. Add spinach and oregano; cook 1 minute or until spinach is wilted. Sprinkle 1/4 cup cheese on each piece of pita bread. Top with spinach mixture, tomatoes, shrimp and remaining cheese.
Place pitas on baking sheet; bake in preheated 400°F oven 10 minutes or until cheese is melted.
