Line pie plate with pie crust or puff pastry. Bake in preheated 400°F oven 8 minutes. Meanwhile, cook onions in butter until transparent; mix with bacon or ham; set aside.
Beat eggs and yolk lightly. Blend in half-and-half, nutmeg, salt, pepper and cayenne pepper, if desired. Place meat and onion mixture in pie crust. Top with cheese; pour egg mixture over cheese.
Bake in preheated 375°F oven 30 minutes or until filling is golden brown and puffy.
