Marinated Vegetable Spinach Salad
Ingredients
- 1 Tbsp. Dijon mustard
- 3 Tbsp. red wine vinegar
- 1/2 Tbsp. dried tarragon
- 2 Tbsp. olive oil
- 8 oz. fresh mushrooms, quartered
- 2 slices red onion, separated into rings
- 16 cherry tomatoes, halved
- 4 cups fresh spinach leaves, washed and stems removed
- 3 slices Sargento® Deli Style Sliced Mozzarella Cheese, cut into thin strips
- Freshly ground black pepper (optional)
Directions
- Combine mustard, vinegar and tarragon in small bowl. Gradually add oil, whisking until slightly thickened. Combine mushrooms, onion and tomatoes in medium bowl. Toss with dressing, let stand 15 minutes.
- Arrange spinach leaves on 4 individual serving plates. Divide marinated vegetables among plates. Top each salad with 1/4 of the cheese. Sprinkle with pepper, if desired.
