Marinated Vegetable Spinach Salad

Ingredients

  • 1 Tbsp. Dijon mustard
  • 3 Tbsp. red wine vinegar
  • 1/2 Tbsp. dried tarragon
  • 2 Tbsp. olive oil
  • 8 oz. fresh mushrooms, quartered
  • 2 slices red onion, separated into rings
  • 16 cherry tomatoes, halved
  • 4 cups fresh spinach leaves, washed and stems removed
  • 3 slices Sargento® Deli Style Sliced Mozzarella Cheese, cut into thin strips
  • Freshly ground black pepper (optional)

Directions

  1. Combine mustard, vinegar and tarragon in small bowl. Gradually add oil, whisking until slightly thickened. Combine mushrooms, onion and tomatoes in medium bowl. Toss with dressing, let stand 15 minutes.
  2. Arrange spinach leaves on 4 individual serving plates. Divide marinated vegetables among plates. Top each salad with 1/4 of the cheese. Sprinkle with pepper, if desired.
