INGREDIENTS

  • 1 (1 to 1-1/4 lb. ) pork tenderloin
  • 1 tsp. dried thyme leaves
  • 1/4 tsp. salt
  • 1/8 tsp. cinnamon
  • 1 Tbsp. olive oil or butter

DIRECTIONS

    Cut pork crosswise into 8 slices. Turn slices over; pound or press with heal of your hand into 1/2-inch thick medallions. Sprinkle thyme, salt and cinnamon over pork.

    Heat oil in large nonstick skillet over medium heat. Add pork; sauté 4 minutes per side or until barely pink in center (145°F). Transfer to serving platter; cover with foil and keep warm.

    Add onion to same skillet; sauté 3 minutes. Add apple; sauté 3 to 4 minutes or until onion is tender. Remove from heat. Sprinkle pork with cheese and top with apple/onion mixture.

HELPFUL HINTS

  • Garnish with a sprig of fresh thyme, if desired.
