INGREDIENTS

  • 1 small clove garlic, peeled
  • 1/2 ripe avocado, peeled, seeded, diced
  • 2 Tbsp. each: reduced fat mayonnaise and reduced fat sour cream
  • 1 Tbsp. white wine vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper

DIRECTIONS

  • 1

    With motor running, drop garlic through feed tube of food processor; process until minced. Add avocado, mayonnaise, sour cream, vinegar, salt and pepper; process until pureed. Refrigerate 15 minutes while chopping salad ingredients.

    In a large bowl, toss lettuce, tomato, radishes and 1/2 cup cheese. Add dressing; toss well and transfer to serving plates. Top with remaining cheese and chives.

HELPFUL HINTS

  • Add sliced grilled chicken or chickpeas for even an heartier main dish.
