Open Faced Chicken Burgers with Horseradish Mayonnaise
INGREDIENTS
- 8 oz. ground chicken (white and dark meat)
- 1/4 cup plain dried breadcrumbs
- 2 Tbsp. grated or minced onion
- 1/4 tsp. each: salt and freshly ground black pepper
- 2 slices Sargento® Natural Blends™ Deli Style Sliced Reduced Fat Cheddar-Mozzarella Cheese, cut diagonally in half
- 2 Tbsp. reduced fat mayonnaise
- 1 Tbsp. prepared horseradish
- 2 slices (about 4 x 3-inch oval) Italian or Vienna bread, lightly toasted
- 1/2 cup packed baby arugula or baby mixed greens

Combine chicken, breadcrumbs, onion, salt and pepper. Form into two oval patties about 4 x 3-inches and 1/2-inch thick. Cook over medium heat in a large nonstick skillet or ridged grill pan coated with cooking spray 6 to 7 minutes per side or until no longer pink in center. Place cheese over patties; cover skillet and cook 30 seconds or until cheese has melted.

Meanwhile, combine mayonnaise and horseradish in a small bowl.

Place toast on two serving plates; top with horseradish mixture, arugula and chicken patties.
