Sopressata and Sharp Cheddar Panini
INGREDIENTS
- 1/4 cup rice vinegar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 cup olive oil
- 2 ciabatta rolls, split
- 1 Tbsp. olive oil
- 2 Tbsp. mayonnaise
- ½ cup baby spinach
- 4 thin slices tomato
- 4 thin slices red onion
- 2 oz. sopressata or hard salami, thinly sliced
- 2 slices Sargento® Deli Style Sliced Sharp Cheddar Cheese

Preheat panini grill to high.

Prepare vinaigrette: In a blender or food processor fitted with a metal blade, combine vinegar, salt and pepper. With the motor running, through the hole in the top of the feed tube, gradually add in oil in a slow, steady stream; process until combined.

Brush one cut side of each roll with oil. Place on a work surface, oiled side down, and spread with mayonnaise. Layer spinach, tomato, onion, sopressata, cheese and spinach. Drizzle each sandwich with 1 tablespoon vinaigrette. Cover with roll tops and press gently.

Place sandwiches in grill; close the top plate and cook until golden brown, 3 to 4 minutes. Serve immediately.
