Mole Style Tamale Pie
INGREDIENTS
- 1 pound lean ground beef or turkey
- 1 red or green bell pepper, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (8 oz.) tomato sauce
- 1/2 cup salsa
- 1-1/2 tsp. unsweetened cocoa
- 1/4 tsp. ground cinnamon
- 1 package (8 oz.) cornbread mix
- 1-3/4 cups (7 oz.) Sargento® ChefStyle Shredded Sharp Cheddar Cheese, divided

Cook meat, bell pepper, onion and garlic in a large deep skillet over medium heat, stirring frequently, until meat is no longer pink, about 8 minutes. Stir in tomato sauce, salsa, cocoa and cinnamon; simmer 10 minutes.

Prepare cornbread mix according to package directions. Spoon meat mixture into an 8 or 9-inch square baking dish. Sprinkle 1-1/4 cups cheese over meat mixture. Spoon cornbread batter over cheese, spreading evenly to edges of dish.

Bake in a preheated 375°F oven 20 to 25 minutes or until bubbly and cornbread is golden brown. Top with remaining cheese. Continue baking 2 to 3 minutes or until cheese is melted.
