Hot Corn, Cheese and Chive Casserole
Ingredients
- 2 eggs, beaten
- 2 cans (14 oz. each) creamed corn
- 1 can (4 oz.) diced green chilies
- 1/2 cup finely chopped fresh chives
- 3/4 cup cornmeal
- 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Double Cheddar Cheese, divided
- 1/4 tsp. salt
- 2 tsp. butter, softened
Directions
- Preheat oven to 350°F.
- In a bowl, stir together eggs, corn, chilies, chives and cornmeal. Fold in 1-3/4 cups cheese and salt. Grease 12-inch baking dish with butter and pour corn and cheese mixture into it.
- Bake 45-50 minutes until golden brown. Remove from oven; top with remaining cheese. Let stand 10 minutes before serving.
