Fresh Salsa Salad

Ingredients

  • 2 cups shredded lettuce
  • 2 cups shredded spinach
  • 3 firm tomatoes, seeded and coarsely chopped
  • 1 cup diced cucumber
  • 1 cup canned garbanzo beans, rinsed and drained
  • 3/4 cup coarsely chopped fresh cilantro or parsley
  • 1/2 cup sliced celery
  • 1/2 cup sliced green onions
  • 3 Tbsp. minced, seeded jalapeño peppers
  • 1/2 cup olive oil
  • 3 Tbsp. red wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 1/2 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/4 tsp. paprika
  • 1-1/2 cups (6 oz.) Sargento® Fancy Shredded Mild Cheddar Cheese
  • Tortilla chips (optional)

Directions

  1. Toss lettuce, spinach, tomatoes, cucumber, beans, cilantro, celery, green onions and jalapeño peppers in large bowl. Combine oil, vinegar, lemon juice, garlic powder, salt and paprika in small bowl. Toss with lettuce mixture. Add cheese; toss lightly.
  2. Refrigerate 30 to 60 minutes to allow flavors to blend. Serve with tortilla chips, if desired.
