Bibb Salad with Mexican Cheese and Jalapeño Ranch Dressing
Ingredients
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 3/4 cup mayonnaise
- 1 small jalapeño chili pepper, seeded, minced
- 1/2 teaspoon garlic salt
- 1/4 teaspoon freshly ground black pepper
- 2 heads bibb lettuce or 1 head Boston lettuce (4 cups packed, 6 oz.), washed and torn into bite-sized pieces
- 1 pint grape or cherry tomatoes, halved
- 1 large or 2 small ripe avocados, peeled, seeded, cut into chunks
- 1-1/2 cups (6 oz.) Sargento® Artisan Blends® Shredded Authentic Mexican Cheese, divided
Directions
- In a medium bowl, whisk together sour cream and buttermilk. Whisk in mayonnaise, jalapeño pepper, garlic salt and pepper. Chill at least 30 minutes.
- In a large bowl, combine lettuce, tomatoes, avocado and 1 cup cheese. Add 1/3 cup of the dressing; toss well. Add more dressing if needed; toss again. Transfer to 4 serving plates; top with remaining cheese. Refrigerate remaining dressing up to 4 days.
