Preheat broiler. Shape beef into 16 mini-patties about 3 inches in diameter and 1/4-inch thick. Top each of 8 patties with 1 tablespoon cheese. Top with remaining patties and seal edges by pressing together.
Place patties on a foil-lined baking sheet. Broil patties 3 to 4 inches from heat source for 4 to 5 minutes per side or until no longer pink. Serve in rolls with optional toppings as desired.
