Hearty Pork & Pinto Bean Burritos

Ingredients

  • 1 small pork tenderloin (3/4 to 1 lb.), cut into 1/2-inch chunks
  • 2 tsp. ground cumin
  • 3 cloves garlic, minced
  • 3/4 cup jalapeño or chipotle salsa
  • 1 can (15 or 16 oz.) pinto beans, drained
  • 4 (10-inch) flour tortillas, warmed according to package directions
  • 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Authentic Mexican Cheese
  • 1 large tomato, chopped
  • Chopped cilantro or green onion (optional)

Directions

  1. Cook pork with cumin and garlic in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes or until no longer pink, stirring occasionally. Add salsa and beans; mix well. Simmer 5 minutes or until pork is cooked through.
  2. Spoon mixture down center of warmed tortillas; top with cheese, tomato and cilantro. Fold sides of each tortilla over filling; roll up burrito-style.
