Hearty Pork & Pinto Bean Burritos
Ingredients
- 1 small pork tenderloin (3/4 to 1 lb.), cut into 1/2-inch chunks
- 2 tsp. ground cumin
- 3 cloves garlic, minced
- 3/4 cup jalapeño or chipotle salsa
- 1 can (15 or 16 oz.) pinto beans, drained
- 4 (10-inch) flour tortillas, warmed according to package directions
- 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Authentic Mexican Cheese
- 1 large tomato, chopped
- Chopped cilantro or green onion (optional)
Directions
- Cook pork with cumin and garlic in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes or until no longer pink, stirring occasionally. Add salsa and beans; mix well. Simmer 5 minutes or until pork is cooked through.
- Spoon mixture down center of warmed tortillas; top with cheese, tomato and cilantro. Fold sides of each tortilla over filling; roll up burrito-style.
