Melt butter in a large skillet over medium-high heat. Beat together eggs, salt, dill weed and pepper. Stir in salmon; add to skillet. Cook, stirring frequently, until eggs are soft-set, about 3 minutes.
Spoon mixture onto bottoms of croissants; top with cheese. Close sandwiches with tops of croissants.
