Garlic and Chipotle Cheddar Mashed Potatoes
Ingredients
- 5 lbs. russet potatoes, peeled, cut into 1-inch pieces
- 36 cloves roasted garlic*
- 1-3/4 cups (7 oz.) Sargento® Bistro® Blends Shredded Chipotle Cheddar Cheese
- 4 oz. cream cheese, room temperature
- 1/4 cup (1/2 stick) unsalted butter, room temperature
Directions
- Cook potatoes in large pot of boiling salted water until tender, about 25 minutes. Drain. Add garlic, cheeses and butter. Mash mixture until smooth. Season to taste with salt and pepper.
