New England Baked Bean Skillet

INGREDIENTS

  • 2 thick slices bacon, preferably applewood smoked, diced
  • 1/2 cup chopped onion
  • 1 red bell pepper, chopped
  • 8 oz. fully cooked smoked sausage or kielbasa, sliced **
 

DIRECTIONS

    Cook bacon in a large, deep skillet over medium heat 2 minutes. Stir in onion; cook 5 minutes, stirring once. Stir in bell pepper and sausage; cook 5 minutes, stirring occasionally. Stir in beans; simmer, uncovered, 8 to 10 minutes or until vegetables are tender and sauce thickens slightly.*

    Arrange sliced cheese over bean mixture; continue to simmer until cheese is melted, about 2 minutes.
