New England Baked Bean Skillet
Ingredients
- 2 thick slices bacon, preferably applewood smoked, diced
- 1/2 cup chopped onion
- 1 red bell pepper, chopped
- 8 oz. fully cooked smoked sausage or kielbasa, sliced **
- 2 jars (18 oz. each) or 2 cans (16 oz. each) baked beans
- 6 slices Sargento® Deli Style Sliced Vermont Sharp White Cheddar Cheese, cut in half
Directions
- Cook bacon in a large, deep skillet over medium heat 2 minutes. Stir in onion; cook 5 minutes, stirring once. Stir in bell pepper and sausage; cook 5 minutes, stirring occasionally. Stir in beans; simmer, uncovered, 8 to 10 minutes or until vegetables are tender and sauce thickens slightly.*
- Arrange sliced cheese over bean mixture; continue to simmer until cheese is melted, about 2 minutes.
Helpful Tips
- * Tip: At this point, bean mixture may be transferred to an 8 or 9-inch baking dish, covered and refrigerated up to 1 day before baking. Arrange cheese over bean mixture; bake uncovered in a preheated 375°F oven 15 minutes or until bubbly and cheese is melted.
- ** Fully cooked chicken sausage may be substituted if desired.
