Boil potatoes until tender, 25 to 30 minutes. Drain and rinse with cold water.
Cut potatoes into bite-sized pieces; transfer to a large bowl. Sprinkle with seasoned salt and pepper. Add sour cream and green onions; mix well. Add 2-1/2 cups cheese, mixing until well blended. Add butter; mix well.
Transfer to a 13 x 9-inch baking dish or pan. (At this point potatoes may be covered and refrigerated overnight.)
Bake uncovered in a preheated 350°F oven 45 minutes; top with remaining cheese.
