Marlene's Potatoes

Ingredients

  • 4 large (about 3 lb.) baking potatoes, peeled
  • Seasoned salt and pepper to taste
  • 1 container (16 oz.) sour cream
  • 6 green onions, thinly sliced
  • 3 cups (12 oz.) Sargento® Fancy Shredded Mild Cheddar Cheese, divided
  • 1/4 cup (1/2 stick) butter or margarine, melted

Directions

  1. Boil potatoes until tender, 25 to 30 minutes. Drain and rinse with cold water.
  2. Cut potatoes into bite-sized pieces; transfer to a large bowl. Sprinkle with seasoned salt and pepper. Add sour cream and green onions; mix well. Add 2-1/2 cups cheese, mixing until well blended. Add butter; mix well.
  3. Transfer to a 13 x 9-inch baking dish or pan. (At this point potatoes may be covered and refrigerated overnight.)
  4. Bake uncovered in a preheated 350°F oven 45 minutes; top with remaining cheese.
