Tangy Asparagus Linguini
Ingredients
- 5 oz. linguini
- 2 Tbsp. light margarine
- 1/4 cup finely chopped onion
- 3 cloves garlic, minced
- 8 oz. fresh asparagus, peeled and sliced diagonally into 1/2-inch pieces
- 2 Tbsp. dry white wine
- 2 Tbsp. fresh lemon juice
- Freshly ground black pepper
- 1/4 cup (1 oz.) Sargento® Artisan Blends® Shredded Parmesan Cheese
- 3/4 cup (3 oz.) Sargento® Shredded Reduced Fat Mozzarella Cheese
Directions
- Cook pasta according to package directions.
- Melt margarine over medium heat in large skillet. Cook and stir onion and garlic until onion is soft. Add asparagus; cook and stir an additional 2 minutes. Add wine and lemon juice; cook an additional minute. Season with pepper to taste. Remove from heat.
- In large bowl, toss hot pasta, Parmesan cheese and asparagus mixture. Remove to serving platter; sprinkle with Mozzarella cheese. Garnish with strips of lemon peel, if desired.
