Tex Mex Cheese & Egg Sandwiches
Ingredients
- 1/4 cup chopped green or red bell pepper
- 1/4 cup chopped onion
- 2 tsp. canola oil or butter
- 4 eggs
- 2 egg whites
- 1/4 cup chunky salsa
- 2 Tbsp. chopped cilantro or green onion tops
- 1/4 tsp. salt
- 2 hoagie rolls or 5-inch pieces of French bread baguette, split, lightly toasted
- 2 slices Sargento® Deli Style Sliced Colby-Jack Cheese
Directions
- Cook bell pepper and onion in oil in a large nonstick skillet over medium heat 5 minutes or until tender. Beat together eggs, egg whites, salsa, cilantro and salt; add to skillet. Cook, stirring occasionally, until eggs are soft set.
- Spoon egg mixture over bottoms of rolls. Cut cheese diagonally in half and arrange triangles over eggs. Close sandwiches with roll tops and serve with additional salsa, if desired.
