Tex Mex Cheese & Egg Sandwiches

Ingredients

  • 1/4 cup chopped green or red bell pepper
  • 1/4 cup chopped onion
  • 2 tsp. canola oil or butter
  • 4 eggs
  • 2 egg whites
  • 1/4 cup chunky salsa
  • 2 Tbsp. chopped cilantro or green onion tops
  • 1/4 tsp. salt
  • 2 hoagie rolls or 5-inch pieces of French bread baguette, split, lightly toasted
  • 2 slices Sargento® Deli Style Sliced Colby-Jack Cheese

Directions

  1. Cook bell pepper and onion in oil in a large nonstick skillet over medium heat 5 minutes or until tender. Beat together eggs, egg whites, salsa, cilantro and salt; add to skillet. Cook, stirring occasionally, until eggs are soft set.
  2. Spoon egg mixture over bottoms of rolls. Cut cheese diagonally in half and arrange triangles over eggs. Close sandwiches with roll tops and serve with additional salsa, if desired.
