Combine mango, avocado, jicama, jalapeño, cilantro, lime juice, lime peel and salt in medium bowl; mix well. Cover and chill while preparing quesadillas.
Spread honey mustard evenly over 4 tortillas; top with ham, bacon, pickle and cheese. Top each quesadilla with remaining tortillas.
Heat 1/2 tablespoon butter in large skillet over medium heat until sizzling. Cook quesadillas one at a time 2 minutes per side or until golden brown and cheese is melted. Cut into 6 wedges; serve with chow chow.
