Cuban Quesadillas with Caribbean Chow Chow
Ingredients
- Chow Chow:
- 1 ripe mango, peeled, seeded, diced
- 1 ripe avocado, peeled, seeded, diced
- 1/2 cup jicama or crisp apple, peeled, finely diced
- 1 jalapeño chili pepper, seeded, minced
- 2 Tbsp. chopped fresh cilantro
- 2 Tbsp. fresh lime juice
- 1 tsp. finely shredded lime peel
- 1/4 tsp. salt
- Quesadillas:
- 4 Tbsp. honey mustard
- 8 (7-inch) flour tortillas
- 2 cups finely diced cooked ham
- 1/2 cup bacon, cooked crisp, crumbled
- 2 Tbsp. finely chopped dill pickle
- 2 cups (8 oz.) Sargento® Artisan Blends® Shredded Swiss Cheese
- 2 Tbsp. butter, divided
Directions
- Combine mango, avocado, jicama, jalapeño, cilantro, lime juice, lime peel and salt in medium bowl; mix well. Cover and chill while preparing quesadillas.
- Spread honey mustard evenly over 4 tortillas; top with ham, bacon, pickle and cheese. Top each quesadilla with remaining tortillas.
- Heat 1/2 tablespoon butter in large skillet over medium heat until sizzling. Cook quesadillas one at a time 2 minutes per side or until golden brown and cheese is melted. Cut into 6 wedges; serve with chow chow.
