Stuffed French Toast Parmesan

  1. Slice bread loaf lengthwise down the middle, 3/4 of the way through. Slice into 6 pieces, forming sandwich pockets. Butter inside of each pocket; stuff with 2 slices of cheese.
  2. Beat eggs in shallow dish, stir in milk, salt and pepper. Melt 2 tablespoons butter in large non-stick skillet over medium heat. Dip sandwich pockets in egg mixture; transfer to skillet.
  3. Cook 3 minutes per side or until golden brown. Sprinkle with Parmesan cheese and serve.
