Peel and seed avocados. Mash avocados in large bowl with fork. Add sour cream, salsa, 1/2 cup cheese and 1/2 cup tomato; mix well.
Cover mixture; chill 1 hour. Before serving sprinkle remaining cheese and tomatoes over dip. Top with olives, if desired. Serve with chips.
