Mexican Chicken & Rice

Ingredients

  • 1 pkg. (7 oz.) yellow rice mix
  • 2 Tbsp. olive oil
  • 1 small onion, chopped
  • 1 small red or green bell pepper, chopped
  • 4 (4 oz. each) boneless, skinless chicken breasts, cut into 3/4-inch chunks
  • 1 tsp. chili powder
  • 1-1/2 cup (6 oz.) Sargento® Fancy Shredded 4 Cheese Mexican Cheese, divided
  • 1 can (7 oz.) corn, drained

Directions

  1. Cook rice according to package directions.
  2. Heat oil in large skillet over medium-high heat. Add onion and bell pepper; cook 5 minutes, stirring occasionally. Add chicken, chili powder and 1 cup cheese; cook 6 minutes or until chicken is no longer pink in center, stirring occasionally.
  3. Stir in corn. Add rice mixture; mix well. Top with remaining 1/2 cup cheese. Cover; turn off heat and let stand 5 minutes or until cheese is melted.
