Speedy Black Bean and Cheese Burritos

Ingredients

  • 1 Tbsp. vegetable oil
  • 1/2 cup sliced green onions
  • 1 clove garlic, minced
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 jar (12 oz.) salsa, divided
  • 1-1/2 tsp. chili powder
  • 2 cups (8 oz.) Sargento® Fancy Shredded Mild Cheddar Cheese, divided
  • 8 (7-inch) flour tortillas
  • 1/2 cup sour cream
  • 1/2 cup sliced black olives
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat oil in large skillet over medium heat; add onions and garlic, cook 2 minutes. Stir in beans, 1/4 cup salsa and chili powder; cook 3 minutes; remove from heat. Stir in 1-1/2 cups cheese.
  2. Spread 1/3 cup bean mixture down center of each tortilla. Roll up; place seam-side down in greased 11x9-inch baking dish. Spoon remaining salsa evenly over tortillas; sprinkle with remaining cheese. Bake in preheated 400°F oven 15 minutes or until hot. Garnish with sour cream, olives and cilantro.
