Spread apple butter on one side of each bread slice. Top 4 slices bread with 4 slices cheese and turkey. Top with remaining 4 slices cheese and place remaining 4 slices bread over cheese, apple butter sides down.
Heat butter on a large griddle or in two large non-stick skillets over medium-low heat. Beat together eggs and milk in a shallow pie plate. Dip each sandwich in egg mixture, turning to coat lightly with batter.
Cook sandwiches in hot butter 4 minutes per side or until golden brown and cheese is melted. Cut each sandwich diagonally in half.
