Cook rice according to package directions; stir in onion and bell pepper during last 5 minutes of cooking time.
Stir together rice, beans, 1 cup cheese, salsa and olives in medium bowl.
Spread rice mixture into 8-inch baking dish that has been sprayed with non-stick cooking spray. Sprinkle remaining cheese over rice mixture. Bake in preheated 350°F oven 20 minutes or until cheese is melted and rice mixture is hot.
