Spicy Cheese Rice
Ingredients
- 1 pkg. (7 oz.) yellow rice mix
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 1 can (15 oz.) pink or red beans, rinsed and drained
- 2 cups (8 oz.) Sargento® Shredded Reduced Fat 4 Cheese Mexican Cheese, divided
- 1/2 cup salsa
- 1 can (2.25 oz.) sliced black olives, drained
Directions
- Cook rice according to package directions; stir in onion and bell pepper during last 5 minutes of cooking time.
- Stir together rice, beans, 1 cup cheese, salsa and olives in medium bowl.
- Spread rice mixture into 8-inch baking dish that has been sprayed with non-stick cooking spray. Sprinkle remaining cheese over rice mixture. Bake in preheated 350°F oven 20 minutes or until cheese is melted and rice mixture is hot.
