Connie's Italian Chicken
INGREDIENTS
- 2 Tbsp. olive oil
- 1 medium onion, diced
- 1 green bell pepper, diced
- 4 cloves garlic, minced
- 1 can (14-1/2 oz.) crushed tomatoes
- 1/2 tsp. Italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 3 lbs. chicken, cut up or 6 bone-in chicken breast halves
- 6 slices Sargento® Deli Style Sliced Mozzarella Cheese
- 1/2 cup (2 oz.) Sargento® Artisan Blends® Shredded Parmesan Cheese
- Chopped parsley (optional)

Heat oil in large skillet over medium heat. Add onion, bell pepper and garlic; cook 5 minutes, stirring occasionally. Stir in tomatoes, Italian seasoning, salt and pepper; simmer 2 minutes.

Place chicken in roasting pan; pour tomato mixture over chicken. Bake uncovered in preheated 350°F oven for 1 hour.

Lay Mozzarella cheese slices over chicken; top with Parmesan cheese. Bake 10 minutes more or until chicken is cooked through and cheese is melted.
