Light Style Jambalaya

INGREDIENTS

  • 1 cup long grain white or jasmine rice, uncooked
  • 1 cup chopped onion
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 1 tsp. blackened or Cajun seasoning
 

DIRECTIONS

    Cook rice according to package directions.

    Generously coat a large saucepan with cooking spray; add onion. cook over medium-high heat 4 minutes or until softened, stirring frequently. Add bell pepper and garlic; cook 3 minutes, stirring occasionally. Sprinkle seasonings over vegetables; mix well. Stir in sausage; cook 1 minute. Add tomatoes; cover and simmer 10 minutes.

    Spoon cooked rice onto four serving plates; top with sausage mixture. Sprinkle with cheese and parsley.
