Ricotta Pancakes

  1. Beat eggs in large bowl. Add cheese, flour, sour cream and sugar; mix until thoroughly combined.
  2. Place 1/4 cup batter onto preheated greased griddle, spreading batter into 4-inch circle. Cook 2 minutes per side or until golden brown; repeat with remaining batter. Serve with fresh fruit, powdered sugar and maple syrup, if desired.
