Spicy Black Bean and Sausage Chili

INGREDIENTS

  • 1 Tbsp. vegetable oil
  • 1 onion, chopped
  • 1 green pepper, seeded and diced
  • 1 lb. cooked chicken-cilantro sausage or andouille sausage, thinly sliced
  • 1 jar (8 oz.) chipotle salsa
  • 2 cans (15 oz. each) black beans, drained
  • 2 cans (14 oz. each) diced tomatoes, undrained
  • 1/2 tsp. oregano
 

DIRECTIONS

  • 1

    Heat oil in large saucepan over medium heat. Add onion; cook 3 minutes or until tender. Stir in green pepper; cook 1 minute more.

    Stir in sausage, salsa, beans, tomatoes and oregano. Simmer over medium-low heat 30 minutes, stirring frequently.

    Ladle into bowls. Top with cheese, cilantro, green onions, sour cream and tortilla chips, if desired.
