Spicy Black Bean and Sausage Chili
INGREDIENTS
- 1 Tbsp. vegetable oil
- 1 onion, chopped
- 1 green pepper, seeded and diced
- 1 lb. cooked chicken-cilantro sausage or andouille sausage, thinly sliced
- 1 jar (8 oz.) chipotle salsa
- 2 cans (15 oz. each) black beans, drained
- 2 cans (14 oz. each) diced tomatoes, undrained
- 1/2 tsp. oregano
- 8 oz. Sargento® Fancy Shredded 4 Cheese Mexican Cheese or Sargento® ChefStyle Shredded Mild Cheddar Cheese
- Optional toppings:
- Chopped fresh cilantro
- Chopped green onions
- Sour cream
- Crumbled corn tortilla chips

Heat oil in large saucepan over medium heat. Add onion; cook 3 minutes or until tender. Stir in green pepper; cook 1 minute more.

Stir in sausage, salsa, beans, tomatoes and oregano. Simmer over medium-low heat 30 minutes, stirring frequently.

Ladle into bowls. Top with cheese, cilantro, green onions, sour cream and tortilla chips, if desired.
