Sauteed Zucchini with Basil & Cheese
Ingredients
- 1 Tbsp. olive oil
- 2 cloves garlic, thinly sliced
- 1 lb. zucchini, sliced 1/4-inch thick
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 large tomato, diced
- 1/4 cup thinly sliced fresh basil
- 1 cup (4 oz.) Sargento® Artisan Blends® Shredded Parmesan Cheese
Directions
- Heat oil in large skillet over medium; cook garlic 2 minutes, stirring frequently. Add zucchini, salt and pepper; cook 5 minutes or until zucchini is crisp-tender, stirring frequently.
- Stir in tomato and basil. Divide among 4 serving plates; top with cheese. Serve warm.
