Combine mayonnaise, cilantro and lime juice in small bowl.
Coarsely chop shrimp in food processor using on/off pulses. Add red snapper; process until coarsely chopped. Add 1-1/2 cups cheese, 1/2 cup bread crumbs, 2 tablespoons mayonnaise mixture and egg. Process until combined. Shape mixture into 8 patties, 1/2-inch thick. Coat patties lightly in remaining bread crumbs.
Heat 1 tablespoon oil in large skillet over medium heat. Cook 4 patties at a time in hot oil 3 minutes per side or until golden brown and cooked through. Keep patties warm in preheated 200°F oven while cooking remaining 4 patties in remaining oil.
Serve with remaining mayonnaise mixture. Garnish with lime wedges, if desired.
