Sicilian Chopped Salad

Ingredients

  • 6 cups romaine lettuce leaves, torn
  • 1/2 cup diced, drained roasted red peppers
  • 1/2 cup halved, pitted kalamata or black olives
  • 4 oz. (1 cup) sliced salami or pepperoni, cut into strips
  • 4 pepperoncini peppers, sliced (optional)
  • 1/2 cup Italian or Caesar salad dressing
  • 1-3/4 cups (7 oz.) Sargento® Bistro® Blends Shredded Mozzarella & Asiago Cheese with Roasted Garlic, divided
  • 1 cup garlic flavored croutons
  • Pepper (optional)

Directions

  1. Combine lettuce, peppers, olives, salami and, pepperoncini peppers, if desired, in large bowl. Add salad dressing; toss.
  2. Add 1-1/4 cups cheese and croutons; toss. Transfer to serving plates; top with remaining cheese and serve with pepper, if desired.
