Sicilian Chopped Salad

INGREDIENTS

  • 6 cups romaine lettuce leaves, torn
  • 1/2 cup diced, drained roasted red peppers
  • 1/2 cup halved, pitted kalamata or black olives
  • 4 oz. (1 cup) sliced salami or pepperoni, cut into strips
  • 4 pepperoncini peppers, sliced (optional)
 

DIRECTIONS

  • 1

    Combine lettuce, peppers, olives, salami and, pepperoncini peppers, if desired, in large bowl. Add salad dressing; toss.

    Add 1-1/4 cups cheese and croutons; toss. Transfer to serving plates; top with remaining cheese and serve with pepper, if desired.
